Omelet a la Duchesse Recipe

Ingredients:

6 pcs of eggs (separate the whites and yolks)
1/2 c of water
Grated zest from 1/2 pc of lemon rind
1/2 c of cream (thick)
1/2 c of sugar (granulated)
1 tsp of vanilla (or orange-flower water)
1/8 tsp of ground cinnamon
Confectioner’s sugar

Instructions:

Combine water, sugar, zest, and cinnamon above the flame; let it boil till it threads when spinned. Set on the side and cool.

Beat egg yolks till creamy then add cream and (strained) syrup; beat them well. Add vanilla then let it cool. Beat egg whites till stiffened; fold onto the cooled yolk mixture.

Transfer onto a baking dish. Sift over confectioner. Bake quickly till browned.
