Eggs Zanzibar Recipe
Ingredients:
Freshly cracked black pepper
Thinly sliced piece of ham
2 Tbsps butter
2 Tbsps catsup (tomato)
2 Tbsps sherry
6 whole eggs
1 eggplant (small)
Instructions:
Thinly slice egg plants. Season with pepper and salt. Dip slices in beaten egg.
Drench in bread crumbs then deep fry until golden in color. Drain on paper towels. Next, broil your ham.
Chop into little bits. Top slices of eggplant with ham. Poach eggs then heat butter, sherry and catsup. Mix well until thick.
Place egg plants on serving platter, top with ham, then the poached egg. Pour sauce over and serve right away.
