Egg Croquettes Recipe

Ingredients:

Dash of pepper
Dash of nutmeg; grated
1 tsp salt
1 Tbsp parsley; minced
1 Tbsp juice (onion)
3 Tbsps flour
2 Tbsps butter
8 ozs milk
6 whole eggs

Instructions:

Hard boil all eggs then finely chop. In a separate bowl mix together flour and butter until it resembles coarse crumbs then slowly incorporate milk. Mix gently to get a smooth and velvety texture.

Season the chopped eggs with parsley, salt and pepper. Combine together egg mixture and the flour mixture and place in the fridge to harden a bit. When the mixture is cold, roll to form cylinders.

Moisten the cylinders in beaten egg with one tablespoon of tap water. Cover with bread crumbs. Deep fry.

When golden in color, remove from heat then serve alongside catsup or cream.
