Eggs A La Bonne Femme Recipe
Ingredients:
1 large Spanish onion; sliced thinly
2 Tbsp butter
6 large eggs
Half-pint milk
1 tsp pepper
2 Tbsps butter
1 tsp salt
1/2 tsp nutmeg (grated)
Instructions:
Separate eggyolks from whites. Heat butter in saucepan then add sliced onions, cook ’til onions turn soft and it shouldn’t be browned. Add in flour, milk, nutmeg, pepper & salt. Mix very well ’til mixture boils.
Remove from heat then let it stand beside stove to keep heated for 10 mins. Meanwhile, beat yolks ’til creamy. Stir into prepared sauce. Have well beaten eggwhites folded into mixture.
Pour into bake dish then bake slowly in preheated oven for 15 mins. Serve immediately.
