Eggs A La Russe Recipe
Ingredients:
A small amount of pepper
1 tsp of juice (onion)
8 ozs of broth
2 Tbsps caviar (small can)
6 whole eggs
Instructions:
Hard boil all eggs. Take away shells then halve each egg. Scoop off the hard yolks carefully so as not to break the egg-whites.
Push the egg yolks through a mesh. Add your caviar, pepper and juice (onion). Mix this well and carefully place some mixture back onto each hollowed egg white.
Heat up the broth to boiling ’till reduced to half its volume. Slowly decant broth over eggs and bake ’till they are heated through. Decant over remainder of the broth before serving.
