Eggs A La Bennett Recipe
Ingredients:
1/2 tsp salt
1/2 c bread crumbs
1 Tbsp onion or chives; chopped finely
1 tsp sauce (anchovy)
2 Tbsps butter
6 whole eggs; hard boiled
Instructions:
Slice eggs lengthways. Scoop out yolks then mash them up together with one tablespoon of butter, onion, anchovy and salt.
Re-scoop inside hollowed out egg white. Decant enough amounts of cream sauce in a ramekin just to cover bottom. Layer in eggs and sprinkle bread crumbs generously on top.
Baste eggs with remainder of butter and heat inside your oven until golden in color.
