Eggs A La Finnois Recipe
Ingredients:
6 large eggs
Half-pint tomato; strained and finely chopped
2 Tbsps flour
2 Tbsps butter
1 Tbsp chives; chopped
2 greenpeppers; finely chopped
6 rounds of bread
Instructions:
Rub flour and butter together. You add in chopped peppers and tomatoes. Stir well ’til boiling then let stand over heated water.
Have eggs poached in heated water. Place them on top of toasts then arrange them on serving platter. Pour over tomato-sauce then sprinkle w/ chopped chives.
