Eggs A La Gretna Recipe
Ingredients:
6 large eggs
Half-pint milk
2 Tbsps butter
1 tsp pepper
1 tsp salt
2 Tbsps flour
2 celery heads; washed & sliced into 1-inch length
6 bread squares

Instructions:
Place celery cuts in boiled water enough to have them covered. Boil then gently simmer for 30 mins ’til they turn tender. Once done, have them drained well. Save boiled water used for cooking celery.
Rub flour and butter together. You add in milk, pepper and salt. When it starts to boil, add celery in this let stand over heated water.
Meanwhile, have eggs poached and bread slices toasted. Spread butter lightly over toast then slide in a poached egg. Arrange on edges of rounded platter then place celery in between dish.
