Eggs A La Regence Recipe
Ingredients:
1/2 tsp pepper
1/2 tsp salt
8 ozs stock (chicken)
2 Tbsps flour
2 Tbsps butter
1/2 can mushrooms (diced)
1 whole onion; shredded
1/2 c ham (cold); roughly chopped
6 whole eggs
Instructions:
Place ham inside pot of boiling water ’till well heated. Heat together flour and butter until melted, then mix in broth ’till boiling. Mix in mushrooms then season with pepper then salt.
Add grated onions. Meanwhile poach some eggs. Transfer eggs to serving platter. Pour over sauce. Make sure to strain while doing so.
Layer ham on top. Garnish with potatoes or place on top of hot cooked rice as a variation. Serve right away.
