Eggs A La Trinidad Recipe
Ingredients:
6 large eggs
1 c crumbs of bread
2 Tbsps flour
1 tsp kitchen-bouquet
1 tsp pepper
1/2 tsp salt
2 Tbsps butter
Half-pint stock
2 kidneys of lambs
Instructions:
Split kidneys then remove tubes. You scald, drain & thinly cut into slices. Melt butter in saucepan then you add kidneys in. Toss ’til kidneys cook then blend in flour, stock, kitchen-bouquet, pepper and salt, stirring ’til it boils.
Grease shallow silver-platter. Add in broken eggs then sprinkle w/ crumbs then allow to stand over pan filled w/ heated water. Cook in oven ’til eggs set.
Pour sauce over then arrange kidneys all around dish’s edges then serve.
