Eggs A La Tripe Recipe
Ingredients:
8 pcs of eggs; hard boiled
3 pcs of onions: sliced thinly
2 Tbsps butter
2 Tbsps flour
8 ozs onion stock
2 Tbsps white cream
Nutmeg; grated
Freshly cracked black pepper
Lime juice
Instructions:
Hard boil eight whole eggs. Peel away shells the thickly slice cross ways. Thinly slice three whole onions into rings.
Place inside a kitchen pot with water then bring it to boil. Drain. Discard water.
Cover onions again in water then bring it to boil. Remove from heat. Drain but set water aside.
Mix together onions and eggs. Using a sauce-pan heat two tablespoons butter then two tablespoons flour. Mix well then season with a dash of grated nutmeg, freshly cracked pepper, lime juice and eight ounces of onion stock.
Heat mixture to boiling, add in two tablespoons of white cream. Blend in the egg-onion mixture. When heated through transfer to a serving platter then use toast as garnish.
