Eggs A La Valencienne Recipe
Ingredients:
6 large eggs
A pint dried rice (boiled)
2 pcs mushrooms
Half-pint of tomato; strained
2 Tbsp butter
1 tsp salt
2 Tbsps of cheese (Parmesan); grated
2 Tbsps flour
1/2 tsp of nutmeg (grated)
1/2 tsp paprika
1/2 tsp pepper
Instructions:
Rub flour and butter together. You add tomatoes then stir ’til it boils. Add mushrooms, paprika, salt, pepper and nutmeg.
Put 2 extra Tbsps butter in granite plate. Heat and melt butter. Break eggs on top w/ yolks intact. Cook eggs ’til they set.
Arrange rice all around dish’s edge then pour tomato-egg sauce. Sprinkle w/ cheese all over.
