Eggs Beauregard Recipe
Ingredients:
5 eggs; hard boiled
White sauce
5 slices of bread toast
Pepper
Salt
Parsley
Instructions:
Hard boil five whole eggs. Scoop out egg yolks. Mash up yolks.
Finely chop egg whites. Make about half a pint of white sauce. Generously season then mix in the chopped whites.
Prepare bread toasts that have been generously buttered. Place egg whites on heated serving platter. Decant over white sauce then top with crushed egg yolks.
Sprinkle with pepper, salt then parsley then serve right away.
