Eggs Bernaise Recipe
Ingredients:
1/2 tsp salt
1 tsp juice (onion)
1/2 c tomato; strained
1 Tbsp flour
1 Tbsp butter
1 Tbsps vinegar (terragon)
1 Tbsp parsley; minced
4 Tbsps olive oil
4 Tbsps broth
4 egg yolks
6 eggs
Instructions:
Heat egg yolks, oil and broth using a double boiler, ’till you reach a velvety thick consistency. Remove from heat.
When promptly cooled, stir diced parsley and vinegar in. Heat together flour and butter. Add tomato until mixture boils. Season with pepper and salt.
Meanwhile prepare six slices of toasted bread. Butter them then place on a serving platter. Place a egg (poached) atop each bread toast.
Decant butter-tomato sauce, add one tablespoon Bernaise sauce. Garnish with truffles or parsley.
