Eggs Creole Recipe
Ingredients:
Desired number of eggs; hard boiled
4 whole onions; sliced finely
4 whole tomatoes; chopped
3 whole green peppers; diced
1 tsp salt
Instructions:
Saute four onions that were finely diced. When tender, toss in four pieces of fresh, cut tomatoes. Then toss in three pieces of peppers (green) that were diced as well.
Cook for 15 minutes. Season using a teaspoon salt. Meanwhile hard boil eggs.
When done, peel then slice lengthways. Place in your baking pan, decant sauce on top and bake until nicely heated through.
Serve on top of hot cooked rice.
