Eggs en Cocotte Recipe
Ingredients:
1 large onion; chopped finely
2 Tbsps butter
1/4 can mushrooms; chopped finely
2 Tbsps flour
1 c of stock
1 Tbsp chopped parsley
1/2 tsp of salt
1 tsp pepper
Eggs
Instructions:
In double broiler, cook chopped onion in butter ’til softened. Add mushrooms, flour & stock, stirring well ’til it boils.
Add parsley, pepper and salt. Scoop 1 Tbsp of prepared sauce into bottom part of small individual serving cups. Then break an egg into every cup. Pour remaining sauce mixture over eggs.
Let cups stand in pan filled w/ heated water then bake them in mid-heat oven for 5 mins.
