Eggs Lafayette Recipe

Ingredients:

1/2 pint curry sauce
Hot cooked rice
Desired number of eggs; hard boiled
Spanish peppers; sliced into strips

Instructions:

Hard boil eggs and roughly chop to pieces. Prepare half a pint curry-sauce. Place eggs on top of cooked hot rice.

Pour over curry-sauce then sprinkle with pepper strips (Spanish). Serve right away.

As a variation you may use tomato sauce, instead.
