Eggs Mexicana Recipe
Ingredients:
2 Tbsps butter
4 Tbsps onions; chopped coarsely
4 Spanish peppers
A dash of red pepper
1/2 pint tomatoes
Salt
Pepper
Instructions:
Put 2 Tbsps butter into saucepan. You add 4 Tbsps of coarsely chopped onions then shake ’til onions are soft. Add 4 Spanish-peppers sliced into thin strips, dash pepper (red) then 1/2 pint solid tomatoes.
Season w/ salt and pepper. Slowly cook mixture while shirring desired amount of your eggs.Once eggs are about to be served, put 2 Tbsps of prepared sauce beside each dish then serve.
