Eggs Monte Bello Recipe
Ingredients:
1/2 tsp pepper
1/2 tsp salt
1 tsp juice (onion)
8 ozs tomatoes; strained
2 Tbsps flour
2 Tbsps butter
6 whole eggs
Instructions:
Poach eggs. When sufficiently cooked, remove from boiling water then dip in beaten egg with one tablespoon water.
Sprinkle bread crumbs on top then deep fry. When golden in color, remove from oil and drain on paper towels. Heat flour and butter.
Add your tomatoes then season with salt and pepper. Transfer eggs onto serving dish, baste with tomato-butter sauce then serve right away.
