Eggs Rossini Recipe
Ingredients:
6 large eggs
12 mushrooms
4 livers of chicken
1/2 tsp salt
1/2 c stock
A dash pepper
Instructions:
Pour stock over saucepan then rapidly boil ’til volume is reduced into half. Throw livers quickly into boiled water then simmer for about 10 mins. Drain when done.
Slice mushrooms then add into stock together w/ livers & allow to stand. Put 1 Tbsp butter into shallow serving platter, once it melts, break eggs into platter the stand in oven ’til they set.
Arrange w/ mushrooms & liver then pour sauce over.
