Eggs Virginia Recipe
Ingredients:
6 corn ears; grated
1/2 c milk
1/2 c flour
2 whole eggs
1/2 tsp salt
A dash of pepper
Cooking oil
Poached egg
Creamsauce
Green peas (optional)
Instructions:
Combine grated corn, milk, and flour. Separately beat 2 whole eggs then add pepper and salt. Blend beaten egg into corn mixture. Combine very well.
Drop a tablespoonful of the mixture into well-heated oil. Turn to make sure that both side are evenly browned. Drain on paper towels then transfer into large serving platter.
Place a piece of egg that was poached above every cake then cover w/ creamsauce. Best when serve w/ green-peas.
