Eggs With Chestnuts Recipe

Ingredients:

1 quart chestnuts
1/2 c of milk (heated)
1 Tbsp of butter
1 tsp of salt
1/2 tsp of pepper
8 whole eggs
1 Tbsp parsley; chopped

Instructions:

Peel one quart chestnuts, boil ’till soft. Drain. Mash up chestnuts.

Add one half cup heated milk, one tablespoon butter, one teaspoon salt then half a teaspoon pepper. Whisk until airy. Place on a double boiler.

Meanwhile poach around eight whole eggs. Decant pureed chestnuts onto a serving platter. Place eggs atop, season with pepper, salt then parsley.
