Omelet with Sweetbreads Recipe

Ingredients:

Sweetbreads
2 Tbsps of flour
2 Tbsps of butter
1 c of stock
Mushrooms; chopped
6 pcs of eggs; beaten well

Instructions:

Boil sweetbreads till they become soft. Discard membrane and cut to slices. Combine butter and flour on a saucepan; add stock then stir thoroughly. Add in the sliced sweetbreads then mushrooms; stir thoroughly till thickened.

Cook the eggs into an omelet. Transfer onto a warm plate then arrange sweetbread on the side. Spoon the sauce above the bread and omelet.
