Egg-Terrific Salads

Egg salad is often used as a sandwich spread or with lettuce, typically made of chopped hard-boiled eggs, mustard, minced celery, salt, paprika, pepper, onion and mayonnaise. It can be made creatively with any number of other cold foods like tomatoes, lettuce, olives, pickles, or cottage cheese.

Here are a few of my favorite salad creations. Pick one and enjoy!

The Traditional Egg Salad

This reminds me of the egg salad that my folks make back home. It’s a tasty recipe and a pleasure on toasted bread with a slice or two of tomato. Or, with a large iceberg lettuce and tomatoes to create a salad bowl and have a scrumptious and nutritious lunch!

You will need:

4 Hard-boiled Eggs, peeled and chopped
1/4 c Light Mayonnaise
1 Celery Stalk (no ends or leaves), finely chopped
2 tsps Red or Sweet White Onion, finely chopped
1.5 tsps Lemon Juice (freshly squeezed if possible)
Slices of Cucumber
Salt & freshly ground black pepper

Steps to prepare:

Gently toss the celery and eggs together in a medium-size bowl. Into a smaller bowl, combine mayonnaise, lemon juice, pepper, onion, and salt. Fold into the celery and eggs. Season to your taste with salt & the ground black pepper. Chill for an hour or so before eating. For each individual serving, spoon 1/2 cup onto a bed of lettuce or spread atop bread.

Egg and Avocado Salad

The salad with a twist! Avocado adds a smooth and creamy taste to the usual salad. Plus a lot of health benefits too!

You will need:

6 avocados – peeled, pitted, and cubed
1 tsp fresh lemon juice
5 hard-cooked eggs, chopped
1/2 red onion, minced
1/2 c light mayonnaise
1 tbsp milk
3 hard-cooked eggs, sliced
Paprika for garnish

Steps to prepare:

Toss avocado cubes with lemon juice onto a serving bowl; Combine avocado with onion and chopped egg. Whisk with the milk and mayonnaise; add to avocado mixture and gently mix. Assemble remaining eggs slices atop the salad in rows. Sprinkle top with paprika.

Dish up on toasted bread or low carb wrap or tortilla. You can add lettuce, tomatoes if preferred. If available, just grab some tortilla chips and use it as a healthy dip.

Egg and Shrimp Salad

For seafood lovers! Shrimp and eggs make a perfect, yummy combination in this salad recipe. Try this out for dinner tonight!

You will need:

1 lb large cooked, peeled and de-veined shrimp
1 c chopped celery
1 big carrot, shredded
1/2 c chopped onion
2 hard-cooked eggs, chopped
3/4 c mayonnaise
Pepper, salt to taste

Steps to prepare:

Inside a large bowl, gently toss the celery, carrot, eggs, onion, shrimp, and mayonnaise. Season with pepper, salt. Serve chilled to guests.
