Poached Eggs on Fried Tomatoes Recipe
Ingredients:
Tomatoes; sliced into 1/4-inch thick
Pepper
Salt
1 egg
1 Tbsp water
Bread crumbs
Cooking oil
Poached eggs
1 Tbsp tomato sauce or creamsauce
Instructions:
Season tomato slices w/ pepper and salt. Dip these slices into beaten egg added w/ water. Then roll quickly on crumbs, dip again into egg then dust w/ crumbs again then deep-fry in well-heated oil.
Drain them on paper towels once done than transfer into hot serving platter. Slide in a piece of egg that was poached on top of every slice. Season w/ pepper and salt. Drizzle 1 Tbsp tomato or creamsauce over the dish then serve immediately.
